Before we start this was tested on the Japanese Port of the Game Specifically, CUSA04290. This should be applicable to the US ports as well. In this guide you will have to use Save Wizard which is the only Public Known Save Editor and yes, you have to pay for it. Don't ask for it for free or if their are other methods. This guide was designed for using it along-side Save Wizard.
SECOND, MAKE BACKUPS What your about to be doing requires some degree of experience and from this point on forward I will assume you already know what your doing, just that im explaining the method.
Some Important Information
We would have to find our game in this list. Luckily I only have 2 saves, but how do I know which save is which?

Editing your SaveData
Now with our data Extracted, lets open it up in HxD or your preferred editor.
I have the offsets of Various things we can edit.
At offset 0x3BF0 is the Difficulty. We can changed this to anything we want wherever we want. Start on professional? finish it on Normal. Though it has it oddities that I will go over.
Difficulty Bytes
We can change these to any of the 4 difficulties, but we can also change it other stuff.
Normally 4 Difficulties
Then We can change it too say "Retro" or "Dummy_57". Some crazy stuff. I have attached several pics in the spoiler below.
Changing your difficulty to these bizarre ones can scare players off or make them join due to curiosity. Though is there any Difficulty change when we apply these? Will i die in one hit? enemies do more damage? Possibly, usually when you change it to these bizarre ones they usually apply Normal or Veteran like Difficulty. Its really hard to tell. Honest Answer, I don't Know.
Anyhow here are the list of IDs for the Difficulties that i have found and noted.
00 - Amateur
01 - Normal
02 - Veteran
03 - Professional
04 - Chapter
05 - Civilian Checkpoint
06 - Back Alley
0001 - Retro
Theirs honestly too many to list. they just kept dragging I wish i would've noted which were which but it wasn't my focus. If you want to find some. Change some to like C0 and work your way up or down. Its kinda fun to read them when continuing a game.
Besides the point, right now my game is set for Veteran. Now I want to change it too Amateur. So using the list I provided we can change our 02 to 00
Our Game is now Amateur.
Stage Editing:
For Editing our stages we to look at offset 0x3C00
So lets go to the Lost in Nightmare Mansion room 6802

Now this particular Function is tied in with the Difficulty but both function differently. I remember back in the PS3 days you were able to get infinity health in story mode. Though here in the PS4 port it seems to simply crash our game or not load and hardlock your game and get stuck in limbo where you have to quit the game manually. I have decided to leave this out for now as it does not work but i am including it in the list of offsets so other enthusiast can inspect and try to figure it out.
