Is there a way to change a mod so it uses a different outfit? For example, if I have a mod which replaces the Eliza Walker outfit, how would I change it to instead replace the jacket outfit?

I have not tried this yet. But each of the DLC outfit correspond to a filepath like native/.../sectionroot/pl1001, pl1002 and so on. If you have a mod meant for Elza, then you will know the file path is for example pl1004. You can give it a shot, by replacing the wanted file into the Elza file path (delete the original first), pack it in and reload in fluffyquack.
