Like Zombi's tutorial (here) all you need to do is find the texture you want then look for another texture you want and rename it to the texture you want replace.
Oldskin.tex.10
Newskin.tex.10

Oldskin.tex.10
Newskin.tex.10
_____
Rename "Newskin.tex.10" to "Oldskin.tex.10"
Make sure to backup the original texture.
Now you should have say a white texture over leon's default hair
