Hello there!
Quite a simple question.
I know on console (i.e. N64), there were Gameshark codes that actually replaced Claire or Leon with either Sherry, Ada, Hunk, Tofu... Since these characters were already playable through the game's narrative, there were data in the game that only required to be triggered to activate the said character and his/her inventory.
I.e. force triggering the "play as Sherry" code would also replace Claire's face with Sherry's in the inventory AND replace the lockpick with Sherry's picture item. It was a full swap through the game's engine, no game file altered. Simply put, I was reusing the trigger present in the game to change the character at will.
I also know for a fact that this was ALSO possible with RE3 on PC through hex editing the saves (that's how I actually managed to play as Dario or Nikolai in the main campaign). Replacing Jill with Carlos also triggered his inventory and other odd events in the game (since it thought I was actually him).

However, when it comes to RE2 I found no information on that whatsoever... But considering it's the same engine, similar entries should be there. I found tons of information on Hex editing items in my inventory, found a couple of trainers in that direction, but nothing regarding a simple character swap like the gameshark code or RE3's hex editing.
So, how could I achieve this on PC? I assume it will be done through the hex editor, but I'm a real noob when it comes to finding the right entry.
I'm not looking for a mod that would force a swap by altering game's files neither, I'm looking to trigger the character change already present inside the game through a button or a save editing... I know I may sound unclear, it's late and I've searched all night.
Any help would be appreciated.
Thanks!

6.10 Player character
--------------------
0x225E = The character you play as (Jill, Carlos, Nicholai...)
00 = Jill normal clothes
01 = Jill normal clothes + sidepack
02 = Jill in biker leathers
03 = Jill S.T.A.R.S uniform
04 = Jill in disco inferno
05 = Jill miniskirt cop
06 = Jill as Regina from Dino Crisis
07 = Jill normal clothes
08 = Carlos
09 = Mikhail
0A = Nicholai
0B = Brad Vickers
0C = Dario
0F = Tofu
Notice that when you play as Carlos, you use his inventory.
Others use Jill's inventory. The address 28D4 is propably
more reliable in setting Jill's outfit, since the value
at 28D4 appears to sometimes override values 00-06 here.
If you're wondering about Tofu, yes it is THE Tofu from
that Resident Evil 2 minigame, only this time, hacking is
the only way to make it playable.
